Sometimes to make the perfect recipe, you need to smash two almost perfect things together. In this case, those two things were Alison Roman's recipe for decidedly-not-sweet granola and my Mammaw's recipe for the sweetest granola you ever put in your mouth. Lucky for you, they had a baby, and it's just right. Not to mention healthy, which is a good thing, because we're kicking off #gograyinmay with TakeTHATTumor.
3 cups of oats
1/4 cup of honey
1/3 cup of olive oil
1 cup of unsweetened dried coconut
1 cup of raisins
1/4 cup of sesame seeds
3/4 cup of pepitas
1 tsp of vanilla
Preheat oven to 300. Get a sheet pan and a big bowl ready. And get yourself ready. This one's a doozy.
Pour all of the ingredients into the large bowl. Stir.
Pour the granola mix onto the sheet pan.
Bake for 60 minutes, stirring every 15 minutes to nothing burns.
