Pork Chops, Salt, Fat, Acid, Heat, and Learning Lessons


I am the OG teacher's pet. Raise your hand if that surprises you. Oh, nobody. Now that I'm out of formal education land, I never really get to show off that part of myself for which I was mocked for most of my childhood. THEN, I read Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking by Samin Nosrat, and I was basically itching to show off how well I had learned from this incredible book. 

SFAH, as I've been calling it lovingly, was the best teaching cookbook I've ever read. Like any good student, I read it faithfully every night before bed, and then as soon as I finished, started to apply the lessons I had learned to my own cooking. 

I won't brag. I won't even go that far into it. All I'll say is that these pork chops (served with mashed potatoes because I AM A FIEND) are as life-changing as the cooking lessons that I learned in SFAH.
